Ingredients (4)
- 1 cup water
- 1 cup sugar
- 1/4 cup mint, chopped
- 1/2 honeydew melon
Method
- Step 1 Combine water and sugar in a small saucepan. Stir over low heat without boiling until sugar has dissolved. Add mint and bring to the boil. Reduce heat slightly, simmer for 2 mins. Cool to room temperature.
- Step 2 Peel honeydew melon and remove seeds. Chop the flesh and puree in a food processor. Strain syrup and combine with the melon puree.
- Step 3 Pour into a glass bottle with a stopper or other sealed bottle, chill until required.
- Step 4 Keeps for up to 3 days and makes about 3 cups (diluted). Serve diluted with mineral water or champagne for an adults-only version.
