  • 1/4 cup (50g) basmati rice
  • 100g chicken breast fillet, diced
  • 1 3/4 cups (430ml) water
  • 150g bok choy, finely chopped

Method

  • Step 1 Rinse rice under cold running water thoroughly, until water runs clear. Drain.
  • Step 2 Bring chicken and water to the boil in a small saucepan. Reduce heat to medium and simmer 2 minutes. Add bok choy, cook a further 2 minutes or until chicken is cooked through.
  • Step 3 Use a slotted spoon to transfer chicken and bok choy to a food processor or blender.
  • Step 4 Add rice to cooking water and bring to the boil. Boil 12 minutes or until rice is slightly overcooked. Reserve 1/4 cup (60ml) of the cooking water. Drain rice.
  • Step 5 Blend or process chicken and bok choy with a little of the reserved water until it reaches the desired consistency. Stir in rice and mash lightly with a fork.
