Ingredients (6)
- 2 bunches beetroot, peeled and grated
- 1 large granny smith apples, peeled and grated
- 1 small onion, finely chopped
- 1 tsp cumin seeds
- 1 cup red wine vinegar
- 1 cup caster sugar
Method
- Step 1 Combine all ingredients except sugar in a large saucepan over medium-high heat. Cover. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 10 mins or until softened.
- Step 2 Stir in the sugar until dissolved. Bring to a simmer. Cook, uncovered, stirring occasionally, for 15 mins or until reduced and thickened. Season. Spoon into warm sterilised jars. Seal tightly, then leave to cool.
